Hotel Esplanade – the Gluten Free Standard
The prestigious Zagreb Esplanade hotel is the first Croatian hotel to gain a Gluten Free certificate! The first certificate was presented to the hotel at a presentation of the BOSK gluten free standard.
The BOSK standard is aimed at caterers and offers them practical information on the preparation, serving and distribution of gluten free food. Introducing this standard will let people on a gluten free diet to safely visit restaurants and hotels.
Recent research has found that gluten is one of the most common allergens in food. More than 70 million people in Europe today are thought to be intolerant of or sensitive to gluten; more than 190 million are thought to avoid wheat and gluten and 11 million people suffer from celiac disease, an autoimmune disease which is the most extreme form of gluten intolerance. All of this, as well as many other facts related to gluten, led to the development of the BOSK gluten free standard. The programme was developed with the aim of reducing the risk of contamination of prepared food and sweets with gluten and sets out protocols for the procurement, storage, preparation and serving of food. The gluten free delicacies in Hotel Esplanade were invented and prepared by the well known chef Ana Grgić with her team.
