Breaded chicken and rizi-bizi – fried chicken fillet with rice and peas

Ah, breaded chicken like the one we have in Zagreb... So simple, yet so delicious!

There are many who claim this is their favourite way of preparing chicken, and that is certainly not surprising. Juicy and tender meat enveloped by a salty, crunchy crust... With rizi-bizi to boot, yummy!

 

Ingredients for 4-6 persons:

1 kg chicken cut up for frying

100g white smooth flour

2 eggs

150g breadcrumbs

 

For Rizi bizi:

100g butter

200 g rice

100 g peas

 

Also:

500 ml oil for frying

Salt and ground black pepper

 

Preparation:

Salt the chicken cut up, whisk the eggs and season with salt and pepper. Dip the chicken in flour, then in eggs and then in breadcrumbs. Set aside. Melt butter in a pot over a flame. Then add rice and fry briefly, while constantly stirring, for it to absorb the fat. Salt the rice, add peas, pour in water and cook over a medium flame. Stir occasionally until the rice is cooked. In the meantime, place the breaded pieces of chicken in a pot over a flame, in deep fat. Fry them on all sides until golden-brown. When done, set the chicken and rice with peas on plates and serve hot.
