Traditional food with a modern twist
Famous for their kremšnita /custard cake/ and expertise in preparing different delicious tidbits, the restaurateurs of Samobor have many surprises in store for their guests during the carnival season when their usual offers will include the traditional food with a modern twist.
The project “Samobor – a city to eat well in” ended after a series of hands-on training seminars on the topic of menus for fašnik /carnival/. The project was launched by the Open University Samobor, in cooperation with the City of Samobor and the Association of Craftsmen in Samobor, and was carried out with the professional support of the Museum of Samobor. Recipes of traditional meals that are prepared during fašnik were chosen from the old cookbooks that are kept in that museum. However, adaptations were made in order to please the palates of modern consumers by top-class Croatian chef, Ivica Štruml, the head chef at Zagreb's Palace Hotel. By adding a modern twist to the traditional meals from the area of Samobor, the restaurateurs have been able to enrich their offers of the top line culinary products that Samobor is already famous for. Citizens of Zagreb do not have to think twice when it comes to treating their palates with a special desert – they flock to Samobor for the cherished kremšnita, a cake prepared to the time-tested recipe. The people of Samobor are also master-chefs in preparing češnjovka /garlic sausage/, salami and various other sweet and savory delicacies. During the time of fašnik, the most sought after treat is by far the krafna (doughnut). The aim of organizing this type of seminar is to offer guests only the best of the best and presenting traditional meals with a modern twist is certainly the best way to maintain the table traditions of Samobor.
